Recipe Spotlight: Apple Pie Bites

So I secretly love dessert. Really. I know it’s very shocking.

For me, the biggest challenge for dessert is the portion sizes. Everything always looks so good that I don’t know where to stop. So I usually lean toward small desserts, like mini cupcakes, cookies and such.

But I do love apple pie.

This recipe was inspired by something I saw on Pinterest, but I adapted it to work with what I had in my pantry.

I had a fantasy football draft this weekend, so I figured that would be the perfect excuse to try these out. Also I’ve been itching to do some real cooking in my new apartment.

Apple Pie Bites

The best part of these is that they are just the right amount of sweet without feeling like you’ve ruined your entire day of eating healthy.

Here’s what you’ll need:

  • 2 small apples (I used granny smith, because I love them and they were on sale).
  • 1 tube of crescent rolls
  • Cinnamon Sugar (I’m not quite sure how much I used).

First, slice the apples, you should get eight slices out of each apple. I kept the skin on, because I like the texture, but I might try them without the skin next time, just to compare.

Here’s a tip: to increase counter space, place a large cutting board on your stove top. By doing this, I think I doubled the counter space in my apartment.

Unwrap the crescent rolls and coat the inside with the cinnamon sugar. Then roll two slices of apple inside of each one. Top with more cinnamon sugar.

Bake at 375 for 15 minutes. Let them rest for about 10 minutes when they come out of the oven.
