Recipe Spotlight: Skinny Taco Dip

So my favorite blog for recipes that are already converted into Points+ is Skinny Taste. She makes delicious light versions of everyone’s favorite recipes. I can’t believe that some of these things are actually healthy.

Yesterday was Cinco de Mayo, so of course I made the Skinny Taco Dip.

I made a few substitutions and a few additions to cater to the tastes of the friends who I made it for.

The secret weapon of this recipe is the first layer. A mix of light cream cheese, reduced fat sour cream, fat-free salsa and taco seasoning, I could eat this stuff on its own all day long.

Here’s the recipe.

  • 8 oz 1/3 less fat Philadelphia cream cheese
  • 8 oz reduced fat sour cream
  • 16 oz jar medium salsa
  • 1 packet taco seasoning
  • 2 cups iceberg lettuce, shredded
  • 2 large tomatoes, diced
  • 1 cup reduced fat shredded cheddar cheese
  • 1 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup green onion,

In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer. Spread on the bottom of a large shallow glass dish. Top with shredded lettuce, tomatoes, red onion, shredded cheese, green onion and cilantro. Serve with baked tortilla chips.

I cheated a little and served it with a bowl of green bell peppers cut into the shape of chips. Perfect substitution for the tortilla chips to save you those few Points+ and boost your veggies at the same time. You can also add some jalapenos if you want to kick up the heat a little.
